A new addition to this list honors the form — with the occasional deviation — and another combines it with the flavors of Indonesia. Meanwhile, Kansas City-style barbecue, known for lacquered pork ribs, has emerged in Wine Country.

The region’s barbecue scene may be small but it’s fierce.
